Rapid Rise Chocolate Cinnamon Rolls

I hadn’t baked much with yeast before I started on my quest to make a cinnamon roll. I probably should have started with something a little simpler, but my household loves a good cinnamon roll. I made these chocolate cinnamon rolls with rapid rise yeast, so they didn’t take hours to rise. These are a great introduction to baking with yeast, and they’re certainly a crowd pleaser.

I’m gonna make this clear… don’t assume you’re gonna mix a few things in a bowl, roll around the dough, and plop them in the oven. These cinnamon rolls will take a little time, but no time in comparison than using traditional yeast. They were definitely worth the effort. The entire pan was consumed in less than a hour (after my in-laws stopped by), and I was glad. They saved me from eating them later.

Chocolate cinnamon rolls using rapid rise yeast are ready in about an hour.
Ingredients
  • Dough:
  • 1¼ cups very warm buttermilk or milk (not boiling)
  • 1 large egg
  • 4 cups all purpose flour
  • 1 teaspoon salt
  • 1 packet rapid rise yeast
  • ¼ cup butter
  • ⅓ cup sugar
  • Filling:
  • 3 tablespoons melted butter
  • ¼ cup chocolate chips
  • ¼ cup cocoa powder
  • ⅓ brown sugar
  • ⅓ granulated sugar
  • 1 teaspoon cinnamon
  • Glaze:
  • 1 cup powdered sugar
  • 1 tablespoon vanilla
  • 2 tablespoons milk
  • 1 tablespoon melted butter
  • Dash nutmeg
Instructions
  1. Dissolve yeast packet in ¼ cup warm milk in small bowl
  2. Add the remaining ingredients keeping back 2 cups of flour in a large bowl and mix well
  3. Mix in yeast
  4. Slowly add the remaining flour in small amounts until a dough ball starts to form.
  5. Hand knead the dough or use the dough attachment on your mixer for a few minutes
  6. Place in a lightly floured microwavable bowl and cover with plastic wrap
  7. Heat a mug of water in the microwave until boiling, roughly 2 minutes
  8. Turn microwave power to 10% and place dough (in covered bowl) for 4 minutes
  9. Allow to sit 4 minutes in microwave
  10. Repeat the previous 2 steps
  11. Preheat oven to 350F
  12. Prepare the filling by mixing all the filling ingredients together
  13. Roll out the dough on a lightly floured surface in a rectangle roughly ¼ inch thick
  14. Spread filling evenly across the dough
  15. Beginning rolling on the long side and roll a long log
  16. Using a bread knife, slice the individual rolls roughly 1.25 inches thick
  17. Grease a 9x13 glass/ceramic backing dish and evenly space rolls on the pan
  18. Optional: Allow rolls to rise in the microwave one last time
  19. Turn the microwave power to 10% and heat rolls 3 minutes
  20. Bake for 20-30 minutes
  21. Sift powdered sugar and mix with remaining glaze ingredients
  22. Spread over cooling rolls

These are tender and delicious. These aren’t difficult to make and they’re great for a long morning at home.
