Three of my favorite cooking ingredients are mozzarella, tomatoes, and basil; one of my son’s favorite ingredients is pepperoni. I wanted to make something quick and simple that both of us would enjoy using some our favorite ingredients. This Caprese Pasta Salad with Pepperoni takes less than 20 minutes to prepare and easily serves a small crowd. It could be a main dish or a side, and it would be a great addition to a pot luck dinner. We used Hormel Pepperoni in our dish, and it was hard to keep a set of little fingers out of the bag.
My son loves it when I try new pepperoni recipes. I’ve often tossed Hormel Pepperoni into a lasagna or spaghetti to #PepItUp. You could slice or quarter the pepperoni in this recipe if you didn’t want the larger slices. If you don’t like mushrooms just forego them. I loved the added flavor that the Hormel Pepperoni added to this dish.
- 16 oz package pasta
- 1 Package Hormel Pepperoni in Original
- ½ cup good quality olive oil
- 4 roma tomatoes, sliced
- ¼ cup diced basil leaves
- 1 cup mozzarella, sliced
- 1 teaspoon oregano
- salt and pepper to taste
- optional ½ cup mushrooms, sliced
- Prepare pasta according to package instructions.
- Rinse and drain pasta in cool water.
- Place pasta in a large bowl.
- Pour olive oil over pasta.
- Add remaining ingredients and mix well.
- Refrigerate until ready to serve.
I highly recommend you use a good quality olive oil. A cheap olive oil will completely ruin the dish. It doesn’t have to be very expensive, but it needs to be an extra-virgin variety. I also recommend using a good pepperoni such as Hormel. This Caprese Pasta Salad recipe would also be great with Hormel Pepperoni Minis.
