The bulk of my entertaining is done in the summer. It’s so much more relaxing to have a party outdoors. You don’t have to worry about the inside of your house being immaculate, or the constant flow of guests messing up your freshly tidied house. You can find activities to help keep children busy such as bubbles, squirt guns, sidewalk chalk, or other lawn games; the noise of kids can be dispersed outside instead of echoing inside your home. I keep a separate collection of warm weather entertaining recipes that are cool and refreshing without being heavy. Today I’m gonna give you a glimpse into one of our most recent summer get-togethers, and sharing a recipe for Strawberry Creme Pie.
We have a small orchard with a variety of fruits. Our strawberries are the first to get ripe, then gooseberries, followed by blueberries. There is a brief lull before the grapes and blackberries are ready to be picked. There isn’t anything quite like creating a recipe with fruits or vegetables produced here on the farm.
This recipe was inspired by my grandmother’s strawberry pie; she made a fresh strawberry pie using strawberry gelatin. This recipe is modified to use sweetened condensed milk. One deep dish pie crust will create four mini-pies. I like that everyone can have their own pie, plus it’s a fun way to serve. I’ll leave the decision to make one pie or four mini-pies up to you.
- 1 deep dish pie crust prepared according to directions
- 4 cups sliced strawberries
- 1 box strawberry gelatin (3oz)
- 2 tablespoons cornstarch
- ¼ cup cold water
- 1 cup sweetened condensed milk
- Optional whipped cream and mint for garnish
- Combine cornstarch and cold water in a saucepan until dissolved.
- Heat until boiling.
- Remove from heat and dissolve gelatin in mixture.
- Add sweetened condensed milk and mix until well combined.
- Fold in strawberries and pour into crust(s).
- Refrigerate until ready to serve.
- Top with optional whipped cream and mint.
People use the phrase, “As American as apple pie,” but I think the phrase should be modified to strawberry pie. I adore that my new Americana napkins from Pier 1 Imports complement my pie so well. They’re a festive addition to my party setup.
