My son just started his second week of kindergarten, and we’re already very busy. He plays football, which practices 3 days a week plus games, and he is performing with the local children’s theater, which also rehearses two days a week. I want my family to eat as much fresh food as possible, but it’s hard to home-cook meals when we are bouncing from school to football to theater. Today I’m sharing a recipe for Fruity Chicken Salad that is a quick, effortless meal solution.

I love a good chicken salad. It is quick and easy to prepare, and it can be served a variety of ways. I like mine over a bed of spinach or lettuce, Jeremy prefers a croissant, and Gabe wants his on regular bread.

I prefer to make mine using a rotisserie chicken because of the flavor and the variety of white and dark meat. And let’s admit, it takes cooking the chicken out of the equation! I can pick them up fresh from my local Wal-Mart and cut the chicken up when I get home. It’s easy to peel the skin from the chicken, debone the chicken, and roughly dice the meat.

You can serve it immediately or pack it for lunch. It can easily be stored in the fridge for a few days.

Fruity Chicken Salad Recipe

Ingredients
  • 4 cups chopped chicken
  • 1 cup diced strawberries
  • 1 cup quartered seedless grapes
  • 1 cup diced apples
  • ¼ cup diced pecans
  • 2 tablespoons lemon juice
  • ¾ cup salad dressing or mayonnaise
  • salt and pepper to taste
Instructions
  1. Dice all fruit and place in large bowl
  2. Add lemon juice and stir well
  3. Add in remaining ingredients and mix well
  4. Add salt and pepper to taste

Walmart has several options for quick meal time solutions. I grabbed some potato salad to pair with our meals during the week, and a 2-liter of Coke Zero. They’re part of the Rotisserie Chicken Meal available at Walmart. The signs in Walmart make it easy to create a family meal.
