I can’t believe it’s fall. I love the colorful leaves, boots and scarves, and cozy sweaters, but I don’t love the cold weather that accompanies it. I frequently make soup during the fall and winter months to help combat the chilly temperatures. It’s fun to throw a few of my favorite ingredients into a pot, and let them simmer into deliciousness. This recipe for Beef, Mushroom, and Rice Soup is perfect for a fall day, and quick enough for a weeknight meal. The addition of Uncle Ben’s® Long Grain & Wild Rice Fast Cook Recipe makes cooking easy and tasty.
Do you have a favorite soup? I love my Great Grandmother’s recipe for vegetable soup, but this might be a close second. I sauteed some onions, mushrooms, and shredded carrots in a skillet before adding them to the pot. The seasoning packet provided with the rice adds the right amount of flavor.
- 1 package Uncle Ben's Long Grain & Wild Rice Fast Cook Recipe
- 1 lb ground chuck
- 1 cup shredded carrots
- 1 cup diced onion
- 1½ cups sliced mushrooms
- 4 cups beef broth
- 1 cup water
- 1 tablespoon olive oil
- Prepare rice according to package directions
- Cook meat and drain fat
- Saute vegetables with the olive oil in a large skillet over medium heat for 10 mins
- In a large pot combine beef broth, cooked rice, meat, water, and vegetables, simmer on low for at least 25 minutes.
*Feel free to add more or less broth to taste. My family likes it with less liquid, so that’s how I make it for them.
The sauteed mushrooms, onions, and carrots are a great way to incorporate more vegetables into your diet. It’s definitely hearty enough that it should leave you feeling full, unlike many soups that are mostly liquid.
