My 6 year old son isn’t a picky eater, but he really enjoys two foods, salad and anything Italian; he begs for pizza, spaghetti, and lasagna. I can handle making homemade pizza or spaghetti, but lasagna can be time consuming. Thankfully, he really enjoys STOUFFER’S® Meat Lovers Lasagna, which makes lasagna night easier on me. I can quickly put together a salad with homemade Roasted Red Pepper Italian Dressing and bake garlic bread while our lasagna is baking. I don’t have to boil the lasagna or put it all together; with STOUFFER’S® Meat Lovers Lasagna, it is already made the way he likes it. The homemade Roasted Red Pepper Italian Dressing is quick to make and it can be stored in the refrigerator in an air tight container so you don’t have to use it all in one sitting.
Cooking hasn’t been easy for me the last few weeks, I broke my hand and it turned into a mess. The accident happened one month ago today. The ground was blanketed with snow and ice, and I took a tumble. I had broken my hand previously and that fracture required surgical repair with screws. It made dealing with this hand injury just a little more tedious. The first few weeks I couldn’t use my hand at all. It nearly drove me crazy not to be able to cook. I still don’t have full use of my hand, but I can use it a lot more than I have been recently. I’m sure you’re wondering why I’m telling you this? I have trouble dicing things at the moment, so I used an immersion blender to dice up the ingredients for this recipe. You can finely dice the basil, oregano, garlic, and roasted red pepper, which would give your dressing a chunkier texture. My immersion blender obliterated the roasted red pepper into liquid, so don’t fret if your recipe looks a little different than mine. It doesn’t really change the taste.
While I’m confessing about dinner, I also used a bagged salad mix as the base of my salad. My chopping skills aren’t up to par at the moment either. I just added some sliced cherry tomatoes, fresh sliced mushrooms, banana pepper rings, and fresh parmesan cheese to it for a pop of additional color and flavor.
Here’s my recipe for the homemade Roasted Red Pepper Italian Dressing:
- ½ Roasted Red Pepper
- ¼ cup fresh diced basil
- 1 clove garlic
- ¼ cup balsamic vinegar (can substitute white in a pinch)
- ½ cup extra-virgin olive oil
- ⅓ cup canola oil
- 2 teaspoons fresh oregano
- 1 teaspoon salt
- ½ teaspoon pepper
- ¼ teaspoon cayenne pepper (optional)
- 1 tablespoon honey (can substitute sugar in a pinch)
- Finely dice all of the fresh herbs and garlic if you aren't using a blender (see notes)
- Add all ingredients and mix well
- Store refrigerated in an airtight container
Note: If you have an immersion blender, add all ingredients into a deep bowl and blend well.
Mix before serving.
You can also use this homemade Roasted Red Pepper Italian Dressing as a marinade.
