Do you love No Bake Cookies? My household does. I recently received some of the new Honey Bunches of Oats Chocolate cereal and I thought it would be fun to try using the cereal instead of oats. I love the cereal with just milk, but I’ve always been a Honey Bunches of Oats fan. These No Bake Honey Bunches of Oats cookies disappeared quickly, nearly half the pan was gone before they had even set. If you love No Bake Cookies or Honey Bunches of Oats cereal, then this recipe is worth a try.
If you haven’t been following along on the blog recently, I broke my hand. I wish it was as simple as that, but I had complications. I broke my hand in college, and I had to have screws placed to repair it. The doctors became concerned about the amount of inflammation and it eventually caused cellulitis. I’ve barely had use of my left hand for the past 3 weeks, and I’ve been on several antibiotics. I haven’t been able to cook, and I didn’t feel like cooking either.
Thank goodness for Honey Bunches of Oats cereal, or I might gone hungry. I just rotated varieties so that I didn’t get bored. The new Honey Bunches of Oats Chocolate is my definite favorite. It’s okay for people with gluten allergies or intolerances because it’s gluten free, not that I’m allergic to gluten.

I noticed one or two had disappeared, so I hurriedly photographed them. This is what they look like about 30 minutes later.

They really need about an hour to cook completely if you don’t refrigerate them.
These No Bake Honey Bunches of Oats cookies will have a matte finish instead glossy when they’re completely set.
*I highly suggest measuring out all of the ingredients and having them sitting nearby your stove while you boil the sugar mixture. If you undercook the sugar mixture they won’t set, and if you overcook they will seem dry and crumbly. It needs to be at a rolling boil for about 1 minutes.

- 2 cups Honey Bunches of Oats Chocolate cereal (can be substituted for another Honey Bunches variety)
- 1 cup sugar
- ½ stick butter
- ¼ cup milk
- ⅓ cup peanut butter or almond butter
- 1 teaspoon vanilla
- ¼ teaspoon salt
- Melt butter in a medium saucepan over medium heat
- Add milk, sugar, salt, and vanilla
- Mix well and bring to a rolling boil
- Boil for 1 minute (try not to overcook or undercook)
- Remove from heat
- Stir in peanut butter until dissolved
- Fold in cereal
- Spoon onto silicone baking mat or wax paper
- Allow cookies to cool and set
- Store in airtight container
I suggest using a cookie scoop to pack and ball batter up. If you’d like the cookies to have more of a chocolate taste, you can add a tablespoon of cocoa powder.
