I’ve spent the last week of my life battling a fever, sleeping, or coughing. It wasn’t until Friday that I dragged myself to the doctor, and I tested positive for flu. I lost my appetite, and but I found comfort in the occasional bowl of Honey Bunches of Oats with Almonds. It might seem like an unlikely comfort food, but it was what I wanted. It was also my inspiration for these Honey Oat and Almond Chicken Nuggets.
I didn’t cook the entire week that I was sick, and I was starting to feel guilty. My family didn’t starve, but they were use to getting at least one or two home cooked meals a day. When I decided to cook, I wanted to make something that wouldn’t require me to stand for too long. I had a few pounds of chicken breasts in the freezer that I defrosted, and they became the foundation for my Honey Oat and Almond Chicken Nuggets. I combined my love of chicken and Honey Bunches of Oats to create a dish that my entire family enjoyed.
You’ll need a few things to whip these up including chicken breast, Honey Bunches of Oats with Almonds cereal, all-purpose flour, and eggs. If you plan on frying them, you’ll need oil but I baked mine. I calculated this recipe her pound of chicken, so you can make as little or as much as you need. I also hand crushed my cereal in a bag, but if you prefer a more flour like constituency, you can use a food processor.
- 1 pound chicken breast diced into cubes
- ¾ cup crushed Honey Bunches of Oats with Almonds cereal
- ¼ cup flour
- 1 egg
- salt and pepper to taste
- Preheat oven to 375F
- Coat a baking dish with non-stick cooking spray
- Rinse diced chicken and pat dry
- Combine crushed cereal with flour in a shallow bowl
- Beat egg
- Dredge diced chicken in egg
- Roll in cereal and flour mixture
- Place on baking sheet
- Bake for 20-25 minutes and/or until chicken is done (this will depend on the size of your chicken pieces)
I could barely get them plated before a little hand started reaching in to grab one. He agrees with me, cereal isn’t just for breakfast.
If you don’t like the almond variety, you could also substitute with Honey Bunches of Oats Honey Roasted cereal.
Honey Bunches of Oats just added a gluten free option to their cereal line-up which is the Honey Bunches of Oats Gluten Free Chocolate. They also added two additional products called Kung Fu Panda Po Power Crunch and Honey Bunches of Oats Crunch O’s. I saw all of the varieties at my local Walmart.
