When I was growing up, my parents both worked full-time. My brother and I never went to daycare; we spent summers and afternoons with our great grandmother, who was a retired school teacher. She firmly believed that a well-educated and playful child deserved a good snack. Mamaw always kept a Keebler cookie jar full of cookies that she would ration out to us after a day at school or playing outside. A walk down the cookie aisle at our local grocery store is almost like a walk down memory lane, and I can still get many of the Keebler cookies that I ate as a child. Life has changed considerably for me; my brother and great grandmother are now just treasured memories from a childhood on a southeastern Kentucky farm. These No Heat S’mores Treats are a perfect treat for a warm summer’s day. You can pre-make them or you can create a build your own No Heat S’Mores Treats bar.

I’m not sure exactly how Mamaw acquired her Keebler cookie jar. I thought we collected UPC codes and sent them off to fulfill an offer for a cookie jar, but my grandmother thinks someone gave her the jar filled with cookies one year at Christmas. She normally kept Keebler Fudge Stripes in it, and Brandon was very fond of her cookie jar. When my great grandmother died, the only item my brother asked for was her Keebler cookie jar.

When my brother Brandon was killed a few years ago, my grandmother made sure that we found the cookie jar. The jar isn’t fancy; it’s a plastic wrapped cookie jar that’s full of family memories. When my niece is mature enough to understand the importance of the cookie jar, I hope I can give it to her. Who knows, maybe she’ll one day have children of her own to feed Keebler cookies.

You have two alternatives to create the filling for the No Heat S’mores Treats; you can try to locate a can of marshmallow frosting or you can make your own using my recipe. I highly suggest the latter, but if you’re short on time, feel free to use my first suggestion if you can locate it.

You’ll need the following to make the No Heat S’mores Treats:

You can optionally include Keebler Grasshopper Mint & Fudge Cookies for a minty S’mores Treat.

Marshmallow Buttercream Frosting (small batch recipe)

Ingredients
  • 1 cup softened butter
  • 1 teaspoon vanilla
  • 1¼ cup sifted confectioner's sugar
  • 8 ounces of marshmallow creme
Instructions
  1. Beat butter in a medium mixing bowl with an electric mixer until fluffy
  2. Add sifted confectioner's sugar ¼ cup at a time until all is well incorporated.
  3. Fold in marshmallow creme until dispersed throughout buttercream
  4. Store refrigerated in airtight container until ready to use.

The recipe above is for enough marshmallow buttercream to fill your s’mores.

Once you have the buttercream filling ready the directions are simple.

  • Place marshmallow buttercream on one side of the Keebler Deluxe Graham
  • Top with a second Keebler Deluxe Graham
  • Roll the outside edge of the s’mores sandwich in sprinkles or nuts
  • Enjoy!
