We’ve had so many weeknight 5:45 pm baseball games this summer that I’ve lost count. I absolutely hate 5:45 games for two reasons, it’s still incredibly hot and it throws our dinner schedule awry. We have to leave for the ballpark at 5:15, and it’s way to early to eat dinner before we go. On the flip side, it’s normally 7:30 before we walk back in the door and that’s really late to start cooking a meal from scratch. One of the quickest dishes to make for a meal is a salad. This Summer Cobb Salad Recipe is loaded with crisp lettuce, fresh fruit, cheese, nuts, Tyson® Grilled & Ready® Frozen Chicken, and topped with Wish-Bone® Italian Dressing. You can switch out ingredients to suit your family’s tastes, and it’s ready in a snap.

During the summer months, I often have to cook 3 full meals each day. The boys get tired of eating the same thing over and over, but I don’t have 2.5 hours free each day to cook and prep. I try to keep ingredients on hand that can be quickly and easily paired to make a meal, especially during the summer. Items such as Tyson® Grilled & Ready® Frozen Chicken, Wish-Bone® Italian Dressing, assorted fresh veggies, bread, pasta, and cheeses can come together to make an assortment of meals. I picked up all my ingredients from our local Meijer store.

Salads are an easy and delicious way to add fruits and veggies to your diet, and they require minimal prep. This Summer Cobb Salad is topped with farm-fresh hard boiled eggs, almonds, and Tyson® Grilled & Ready® Frozen Chicken for a hearty amount of protein. The original recipe called for crumbled blue cheese but I’m allergic to it. I also substituted strawberries for blackberries because they aren’t in season right now.

Ingredients
  • 6 ounces Tyson® Grilled & Ready® Fully Cooked Frozen Grilled Chicken Breast Strips
  • ½ cup Wish-Bone® Italian Dressing
  • 10 ounce bag Romaine lettuce
  • 2 tablespoons toasted almonds
  • ½ cup fresh blackberries (I substituted strawberries)
  • 2 diced hard boiled eggs
  • ½ cup diced avocado
  • ½ cup fresh raspberries
  • 2 tablespoons crumbled blue cheese (I substituted mozzarella)
Instructions
  1. Prepare chicken breast strips according to package instructions.
  2. Arrange lettuce in a large platter or bowl.
  3. Add almonds, blackberrries, eggs, Tyson® Grilled & Ready® Frozen Grilled Chicken Breast Strips, avocado, raspberries and blue cheese.
  4. Top with Wish-Bone® Italian Dressing
