We’ve had so many weeknight 5:45 pm baseball games this summer that I’ve lost count. I absolutely hate 5:45 games for two reasons, it’s still incredibly hot and it throws our dinner schedule awry. We have to leave for the ballpark at 5:15, and it’s way to early to eat dinner before we go. On the flip side, it’s normally 7:30 before we walk back in the door and that’s really late to start cooking a meal from scratch. I try to keep things on hand that I can easily put together to create a quick and balanced meal for my family. This Grilled Chicken Wrap with Italian Dressing can easily be served with a salad to create a delicious meal in minutes.
I try to keep ingredients on hand that can be quickly and easily paired to make a meal, especially during the summer. Items such as ready to eat grilled chicken breast, Italian Dressing, assorted fresh veggies, bread, pasta, and cheeses can come together to make an assortment of meals. This Grilled Chicken Wrap with Italian Dressing was ready in less than 15 minutes since I used ready to eat grilled chicken breast.
Over the weekend, I attended a family reunion. We had gone to a hot air balloon race the evening before and didn’t get home until late. I needed to take a side dish and a dessert, and I was short on time. I quickly boiled 3 lbs of spaghetti, chopped up nearly all the veggies I had in the fridge, added a few diced herbs, and topped it all with Italian Dressing in several large trays.
Grilled Chicken Wrap with Italian Dressing:
- Grill/Prepare chicken breast according to package instructions.
- Lightly toast/reheat a slice of naan or pita bread. I prefer naan because it’s usually softer.
- Add a slice of cheese, sliced tomatoes, pickles, and lettuce to the bread.
- Add several slices of chicken to the wrap
- Top with Italian Dressing
