StarKist Tuna had a booth at BlogHer and I had a planned meeting with the brand, but I was unable to travel. My scheduled meeting was inspiration for this post and recipe.
I normally really enjoy cooking, but it’s hard to stand for long periods of time at nine months pregnant. This recipe only takes a few minutes to prepare and it can be stored in the refrigerator until you’re ready to eat. Thai Chili Tuna Salad Ingredients:
- 2 StarKist Tuna Creations® Thai Chili Style Tuna packets
- 1/3 cup diced cucumber
- Squeeze of lime juice
- 1/4 cup plain Greek or regular yogurt
- 1/8 cup finely diced onion
- Optional tomato and/or lettuce to add to your sandwich
- salt and pepper to taste
Combine tuna, cucumber, yogurt, onion and lime juice in a medium bowl. Mix well. Add salt and pepper to taste. Refrigerate covered until ready to eat.
