One of our favorite desserts is a traditional bread pudding. They’re easy to make because you generally have all the ingredients already in your pantry, and you can mix in additives and spices as you please. Today I’m sharing a recipe for a Chocolate Chip Pecan Bread Pudding that’s made quickly and easily with the help of Marie Callender’s® Double Chocolate Chip Loaf Cake.

There’s something especially delicious about a warm, gooey bread pudding. Unless you have some form of chocolate bread on hand, you can only have chocolate chips as a mix in. This recipe uses Marie Callender’s® Double Chocolate Chip Loaf Cake as the bread base for the recipe. Because it’s typically sold in the freezer section next to Marie Callender’s® pies, you do need to thaw out the cake  and prepare according to package directions before you assemble the ingredients. You’ll just have to resist the urge to slice off a bite to eat because you really need the whole loaf for the recipe.

Chocolate Chip Pecan Bread Pudding

Ingredients
  • 1 Marie Callender'[email protected] Double Chocolate Loaf Cake
  • 4 eggs
  • 1½ cups milk
  • ½ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • ½ cup pecans
Instructions
  1. Preheat oven to 350F
  2. Grease a 9x9 baking dish
  3. Thaw Marie Callender's® Loaf Cake and prepare according to package directions and allow it to cool completely
  4. Slice cake into small squares and place in a bowl
  5. In a separate medium size mixing bowl beat eggs until frothy
  6. Add in milk, cinnamon and nutmeg to eggs
  7. Pour mixture over the bread and allow it to soak for 15 mins.
  8. Fold in pecans
  9. Bake for 30-35 minutes
  10. It's best served warm

 

I found it’s best served with Reddi-Wip® Real Whipped Cream (it’s made with real cream), but a dollop of ice cream will work in a pinch too. Guests will never know that this Chocolate Pecan Bread Pudding isn’t completely homemade, and clean-up is a breeze. You can use the same basic recipe and switch out any of the other Marie Callender’s Loaf Cakes for a totally different flavor for your next get together.
