Carrot Pecan Bread Recipe

Ingredients
  • 1 cup vegetable oil
  • 1¼ cups all-purpose flour;
  • 1½ teaspoons baking powder
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon kosher salt
  • ½ cup chopped pecans
  • 3 large eggs
  • ¾ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2½ cups grated carrots
Instructions
  1. Preheat oven to 350F
  2. Grease a 9x5 loaf pan
  3. Beat eggs, oil, flour, baking powder, salt, and sugar together in a large bowl
  4. Mix in vanilla, cinnamon, and nutmeg.
  5. Fold in carrots and pecans.
  6. Pour in pan
  7. Bake for 60 to 75 minutes or until toothpick comes out clean
  8. Do not over bake
  9. Allow bread to cool before serving
