(Not-So) Rotten To The Core Cupcakes

Ingredients
  • 1 cake mix
  • 3 whole eggs
  • 1¼ cups water
  • ¼ cup vegetable oil
  • 1 small package pudding mix (cold set)
  • 1½ cups milk
  • Optional: green food coloring
  • 1 container premade frosting
  • Optional: red food coloring
  • Red Sprinkles
  • 1 small package green fondant
  • Small pretzel sticks
Instructions
  1. Preheat oven to 375F
  2. These cupcakes are meant to be slightly denser than the cake mix instructs
  3. Combine cake mix, eggs, oil, and water in a large bowl
  4. Mix well
  5. Place cupcake liners in a muffin pan
  6. Fill each cupcake liner ¾ way full with batter
  7. Bake for 15-20 mins until done
  8. While cupcakes are baking prepare the pudding mix with 1½ cups milk
  9. Optional: Add several drops of green food coloring
  10. Mix well and refrigerate until cupcakes are cool.
  11. When cupcakes are done baking, allow them to cool 5 mins in the pan.
  12. Using an apple corer, insert ¾ way down into the cupcake and remove center
  13. Save just the top of the cupcake core, discard (or eat) the crumbs
  14. Leave the cupcakes in the pan while coring, this makes them more stable
  15. When you have cored all of the cupcakes, remove them from the pan to finishing cooling
  16. When cupcakes have cooled, fill a zipper bag with pudding mixture.
  17. Snip off the end of the bag with clean kitchen scissors and fill the center of the cupcake to the top
  18. Be careful not to overfill
  19. Replace the top with the core you saved
  20. Put several drops of red food coloring in the frosting container and mix well
  21. Frost the top of each cupcake
  22. Place sprinkles in a small bowl
  23. Carefully dip the top of each cupcake in the sprinkles to coat well
  24. Break pretzel to desired height and insert into center of cupcake
  25. Roll out fondant to desired thickness
  26. Using a leaf print cut and press, cut the desired amount of leaves and imprint the design
  27. Place one leaf on the top of each cupcake
  28. Cover and refrigerate until ready to serve.
