Brown Sugar Divinity
  • 1 cup brown sugar
  • 1 cup white sugar
  • ⅓ cup corn syrup
  • ½ cup cold water
  • 1 teaspoon vanilla
  • ¼ teaspoon salt
  • 2 room temperature egg whites
  1. Mix water, syrup, vanilla, and sugars in a pot over medium high heat until dissolved.
  2. Begin beating egg whites and salt until stiff peaks form.
  3. Boil syrup mixture until candy thermometer reaches 250F
  4. Add syrup mixture into egg whites a spoonful at a time while mixing.
  5. *If you dump them in all at once, you'll cook the egg whites too quickly.
  6. Add all of the syrup mixture, and mix 3-5 minutes with an electric or stand mixer.
  7. The candy is ready to drop when it starts to hold it's shape.
  8. Spoon out on to wax paper, or greased baking sheets.
  9. It can take several hours for the candy to fully set.
