Citrus Pasta Salad with Grapefruit, Blood Orange, and Kale

Ingredients
  • 1 large Sweet Scarletts Texas Red Grapefruit
  • 1 large blood orange
  • 1 cup diced kale
  • 8 oz shell shaped pasta
  • ¼ red onion thinly sliced
  • ⅓ cup extra virgin olive oil
  • 2 tablespoons orange juice
  • 2 tablespoons grapefruit juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon grapefruit zest
  • 1 tablespoon orange zest
  • 1 tablespoon honey
  • salt
  • pepper
Instructions
  1. Boil pasta according to package directions and drain
  2. Zest Sweet Scarlett's and blood orange, and set aside
  3. Slice fruits ¼ inch thick and trim the rind
  4. Separate fruit into chunks
  5. Thinly slice red onion
  6. Remove stems from kale and dice
  7. Prepare dressing by mixing olive oil, zest, juice, and honey
  8. Place pasta in a large bowl
  9. Add sliced grapefruit, orange, kale, red onion, and dressing
  10. Mix well
  11. Salt and pepper to taste
  12. Store refrigerated in an airtight container until ready to serve
  13. Optional garnish with wedged fruit
