Basil Pesto Potato Salad Recipe

This is an interesting twist on your typical potato salad dish with the addition of basil pesto and sour cream.
  • 1½ pounds small potatoes
  • ¼ cup diced sweet onion
  • ¼ cup basil pesto
  • ¼ cup sour cream
  • ¼ cup diced green onion
  • Salt and pepper
  1. Cook potatoes using preferred method such as steamer basket, boiling, or microwave until fork tender.
  2. Rinse and allow them to cool completely
  3. Combine potatoes, sweet onion, pesto, and sour cream in a large bowl.
  4. Mix well.
  5. Salt and pepper to taste.
  6. Cover and refrigerate until ready to serve.
  7. Top with diced green onion before serving.
  8. If potato salad gets too dry, add equal amounts of pesto and sour cream until desired consistency.
