On Friday my son had his tonsils and adenoids removed, and I’m sure that he didn’t want to spend Easter at home on the couch. We didn’t get to do any of the things we would normally do to celebrate Easter including our usual Easter lunch. Jeremy decided to smoke a pork butt and invite his family over to eat dinner. I spent most of the day tending to an uncomfortable 6 year old who didn’t want anything anything other than pudding or ice cream to eat. Thankfully his mother and sister agreed to prepare the sides. I felt weird not cooking anything, so I decided to bake a frozen pie. I was sleep deprived from being up with my son and shouldn’t be trusted following any recipe, but who really needs an excuse to make a Marie Callender’s pie?
