If you frequent my blog much, you’ll notice that I’m a huge fan of semi-homemade meals. We’re a busy family and I like to be able to cook a nice meal and have it on the table in thirty minutes. I also get bored with the same recipes, and sometimes it’s fun to mix it up. Today I’m sharing a simply special meal that can go from freezer to dining room table in about 35 minutes. I’m preparing a slightly different Bacon, Broccoli, and Cheese Casserole that I pair with Barber Foods Cordon Bleu and fresh steamed veggies for a tasty family meal. The casserole uses cheddar cheese soup, bread crumbs, bacon, fried onion straws, a splash of milk, an egg, cheddar cheese, and of course, broccoli.

 Monday’s are especially rough on our household. My son has theater practice every Sunday afternoon. He’s back to school on Monday, plus he typically has a soccer game (I coach) and theater practice. We try to squeeze in dinner and get ready for Jeremy to leave to teach for the week. I want Jeremy to have a good meal before he leaves, but I don’t have time make an elaborate dinner. Meals like Cordon Bleu & Bacon, Broccoli, and Cheese Casserole often help me resist the urge to grab something take-out to feed my family. I can quickly mix up my side dish, and let our entree and side cook in the oven together while I’m helping Gabe finish any homework he might have. This casserole is a great way to sneak some veggies into the diet of a non-veggie eater too.

Bacon, Broccoli, and Cheese Casserole

Ingredients
  • 1 10½ ounce can cheddar cheese soup
  • ¼ cup milk
  • 1 12 ounce bag frozen broccoli
  • 1 egg
  • ¼ cup bread crumbs
  • ⅛ cup diced cooked bacon
  • ¼ cup shredded cheddar cheese
  • Topping:
  • 1½ tablespoon melted butter
  • ⅛ cup bread crumbs
  • ⅛ cup diced bacon
  • ⅛ cup shredded cheddar cheese
  • ¼ cup fried onion straws
Instructions
  1. Preheat oven 375F
  2. Combine all casserole ingredients in a large bowl and mix well.
  3. Pour into a greased 1½ quart casserole dish
  4. Mix topping ingredients until well combined
  5. Sprinkle topping mixture over casserole
  6. Cover with aluminum foil and bake for 20 mins
  7. Uncover casserole and bake another 10 mins

 I bake the Barber Foods Stuffed Chicken Cordon Bleu simultaneously according to package directions. Always remember standard food safety rules for chicken, it needs to reach an internal temperature of 165F. We have a digital meat thermometer that comes in very handy.

That is an awesome accomplishment! Anyways, the random thing. I saw this post and noticed your plate was the exact same that my grandmother had a set of when I was growing up.     1. Aw thank you! My set belonged to my grandmother. She gave it to me a few years ago. I’ll forward along the information. I’ve actually been buying up extra pieces when I can find it. I have maybe 10 place settings now. I haven’t had much luck finding serving pieces. Good luck with your search.
