10 Tips For Visiting Legoland Florida

We decided to make a last minute trip to the Orlando, Florida, area during my son’s spring break. I had delayed planning anything because I knew I would be more than 6 months pregnant at the time, and I wasn’t sure how I would feel. We really wanted to do something fun with our son before he is stripped of his ‘only child’ title this summer, since any subsequent travels will involve scheduling around the needs of an infant. I was offered two complimentary media passes to check out LEGOLAND Florida, and my son (who’s 7 now) was more than excited to check out the park. None of us had been to any LEGOLAND Park previously, so it was a new experience for everyone. An ocean view is likely to be a requirement for most visitors! However, anyone with one of the many San Clemente ocean view homes may be less taken aback by being so close to the sea. Every pregnancy experience is different. I didn’t have an easy time with my son Gabe, but it pales in comparison to this go around. I once whined that nothing could be worse than having hyperemesis; I was quickly proved wrong. I’ll leave the full story for another day, but in short form, I suddenly developed a rash with facial swelling at the start of my second trimester. The rash was painful and the swelling was just plain scary. We’re still not sure on the cause of my problems, but in the process of diagnosing me, one of my treating physicians said that I had a non-Celiac wheat allergy. It put my diet into an absolute tailspin. I had been living on wheat based foods since I was diagnosed with hyperemesis. My go-to breakfast was toast and I had an egg sandwich with cheese almost daily to help with my protein intake. I had been craving an almond flavored cupcake from the bakery that made my wedding cake for days, and I was suddenly faced with never eating a regular cupcake ever again.

My husband is also a pescatarian so I’ve also been looking at some pescatarian meal delivery options for him. Luckily, we can both eat this meal. This Shrimp and Avocado Salad is gluten-free, but if you really want to add in a carb, GF corn tortillas or corn tortilla chips are a nice addition (think shrimp and avocado nachos). If you don’t have to follow a GF diet, this would be good on club crackers or even spread on a sandwich.

Earlier in the year my son asked to join Cub Scouts. I was a little apprehensive because of the time commitment, but I had heard lots of good things from other parents about scouting. I’m so glad we decided to sign him up. He loves Cub Scouts, and he has worked hard trying to earn badges. Several weeks ago our family attended our first Cub Scout weekend camp out.

I had to drag out the camping gear and figure out what still worked! It’s been years since we went camping but the mini washing machine, lantern, generator and gas stove all still work so we might be going camping more often now I know this! Another thing I had to do was think about what we could eat all weekend other than roasted hot dogs and marshmallows.

Luckily Jeremy’s best friend is a scouting pro. His oldest is an Eagle Scout, and his youngest is a Webelo. I spent most of my weekend mesmerized at campfire cooking skills. Others had to remind him how to appropriately clean up after himself though. For those who are considering some of the cooking methods in the rest of this article, don’t forget to do the dishes correctly as well. Leaving food leftover, for example, is a bad idea because it could attract animals. You can learn a few approaches from Techie Camper that might be handy when cooking in nature. But back to Jeremy and his fantastic cooking skills!

The other parents were telling me about the results they’ve been getting so as soon as I got home I was looking at a sous vide review to see if they’re as good as everyone was saying they were! Sous vide is actually where the idea for the omelets came from because it’s the same process, just much less precise. Today I’m sharing how to make eggs in a bag and some of our other adventures camping with Cub Scouts.
