I’m not sure how my mother managed having four kids; I know she had a lot of help from my grandparents and great grandparents, but there are days that I struggle to manage caring for two children. I used to have more time to prepare and cook meals before my daughter arrived, but my son was 7 and he didn’t require my constant attention. My daughter will be 6 months old at the end of the month;  between breastfeeding, teething and sleep regression, I’m exhausted. I’m not grumpy in the morning, but it takes a few minutes to get me up and going. I like to drink my coffee leisurely and get up to make breakfast when I’m ready. That can result in my family grabbing cereal or something similar instead of waiting on me to make breakfast. To compromise, I like to make things that can be quickly mixed up and shoved into the oven while I enjoy my first cup of coffee. Spiced Pumpkin Scones Recipe: Fall Is Coming

The famed Pumpkin Spice Lattes have been out for weeks now, and I haven’t had one yet. I typically enjoy them, but I’ve cut back on buying coffee since Jeremy purchased a Breville for me last year. I still need my pumpkin fix, I just don’t get to drink it. Every year Jeremy alternates between growing heirloom pumpkins and cushaw; this year happened to be a pumpkin growing year, thankfully we have lots of them. I’ve processed pumpkin for a few weeks, and creating new recipes to enjoy them. This Spiced Pumpkin Scones recipe is a nice balance between pumpkin, spices, and sweetness. I used pumpkin purée from home-grown pumpkins in the recipe, but you can use canned too. I also lightly glazed them with a cream cheese glaze.

Have you ever went to grab a glazed donut to discover that they’re stale? Rarely do we finish off a dozen glazed donuts before they go stale. Jeremy loves donuts from a local donut shop called Amon’s Bakery. I’m actually not crazy about glazed donuts, but I agree with him that they’re pretty awesome when they’re fresh. Once donuts start to go stale even reheating can’t salvage them, but I discovered they make tasty French Toast. This Glazed Donut French Toast recipe won’t need syrup or any other toppings, the sugar glaze on the donuts starts to caramelize in the skillet and makes them amply sweet.

One of the hardest parts of returning from our 12 day cruise was getting myself back in the cooking groove. We had three meals a day prepared for us, and I just wasn’t ready to cook three meals a day for the three of us when we came back. I noticed a few lemons and some blueberries in our kitchen, and I knew the blueberries wouldn’t stay fresh for long. My family loves pancakes, but I’m not a fan of standing up for half an hour frying all of them; unless I use a griddle, half of the pancakes are cold before the final batch is done. I love a one skillet pancake because it’s simple to make, and requires no frying. I can mix up one up, pour it into a hot skillet, and bake it in the oven. My recipe has a slightly different taste and texture than your typical pancake. The addition of the beaten eggs will give them a fluffier construction. I also use Aunt Jemima Original Pancake Mix to make this recipe even quicker and easier.
