Dark Chocolate Coconut Almond Cake

Today is my sister’s 27th birthday (how sweet it must be to just turn 27). Since we live at least 1.5 hours from each other, I won’t get to see her today. To help her celebrate, I decided to put a cake up on the blog today, and call it her virtual birthday cake. Last night I discovered that she wanted a Hummingbird Cake, and that my grandmother got that confused with an Italian Cream Cake and accidentally baked the wrong one. Had I known that she wanted a Hummingbird Cake, I would have baked her a virtual one (I still might surprise her this weekend…if I can catch enough hummingbirds!). I know, I know, hummingbirds aren’t actual ingredients in a Hummingbird Cake, and I would totally be grossed out if they were. Today she’ll have to settle for this Dark Chocolate Coconut Almond Cake (reminiscent of a certain trademarked candy bar). It’s a fluffy almond cake filled with a coconut mousse that’s coated in dark chocolate and topped with slivered almonds. It isn’t too heavy or too sweet, but definitely satisfying.

We are a REESE’S loving family. It’s definitely my son’s candy of choice. When I was working on this recipe, he was stealing them off the countertop. I’m pretty sure he has a stash of REESE’S Miniatures now, or most likely a pile of wrappers, hidden somewhere. Several months ago I created this recipe for REESE’S Peanut Butter Mousse. Shortly after I created that recipe, I realized it would be great filling for a cake or even a pie. I hadn’t been able to get that idea out of my head, and when I heard about the REESE’S Snack Talk Challenge it inspired me to make my recipe a reality with this REESE’S Torte.

Vanilla Bean Icebox Pie With Chocolate Ganache

I have a love for vanilla bean flavored anything. My personal favorite is vanilla bean ice cream. While shopping at my local Walmart, I stumbled upon the new Müller’s® Ice Cream Inspired Yogurt. I couldn’t help but grab at least one of every variety, but I grabbed several of the vanilla bean flavor. I knew I wanted to make something with the yogurt, and I wanted my creation to retain the yogurt’s flavor. I recalled my great-grandmother making an icebox pie. I had never attempted to make one, but I remembered they weren’t too complex. I think my great-grandmother would be proud of my Vanilla Bean Icebox Pie. It wasn’t too shabby for a first attempt. I opted for a chocolate ganache that I garnished with almonds.
